Cut the potatoes evenly, they will bake evenly. Do not cut very thick slices, 1/4 inch is perfect.,thick fries will take too long to bake.
Keep fries separately on baking tray. Do not stag them.
These wedges should be baked at a high heat, which gives them a crisp, caramelized texture.Keep an eye on the chips as sweet potato does catch very quickly- turn the heat down and cook for longer if you need to.
Fries should be crisp from outside and tender inside . Bake them on 375°F to 400°F, low temperature will result tender sweet potatoes, but never crisp.
Flip them once, never more: the coating needs time to set before you flip the fries.
