Broccoli almond soup

A wholesome vegan, low calorie soup packed with nutrients. A very simple recipe to prepare in rainy and cold season. It is a creamy and healthy soup made from broccoli and flavored with garlic and almonds. Almonds not only adds to the nutritional value, but they also give a creamy and nutty texture to the soup. without adding cream, milk and almonds make this soup creamy.

Ingredients-

Broccoli florets------ ---- 1 cup

Garlic cloves-------------------2

Onion finely chopped------1

Salt and Pepper---------------to taste

Olive oil--------------------------2 t Sp.

Almonds-------------------------8

Milk-------------------------------1/2 Cup

How to Make-

  1. in a bowl add water and broccoli florets, cook in microwave on high heat for 4-5 minutes, immediately dunk into cold water.

  2. Bland Broccoli into a chunky base puree.

  3. Blanch almonds in water for 2-3 minutes,bland with milk coarsely.

  4. In a deep pan heat oil, add garlic and saute for 2 minutes.

  5. Add onion and cook till fragrant.

  6. Add broccoli puree and cook for 3-4 minutes.

  7. Add almond milk and cook for 2-3 minutes.

  8. Add salt and pepper.

  9. Serve hot with garlic bread or any crusty bread.

Tips-

  1. When you add blended mixture, check the consistency of soup, add water if required.

  2. Cook on low or medium flame.

  3. Add salt and pepper when soup is ready, do not boil after adding salt, it may curdle.

  4. You can add flavor of your choice.
