Broccoli soup




Enjoy the winter season with this scrumptious soup and appetizer. Perfect for cold winter evenings.

Ingredients- 2 tsp- olive oil 1 small- chopped onion 3 cloves-garlic, peeled and chopped 1 broccoli cut into small flowers 1 small potato peeled and chopped 1 carrot chopped 4 cups -water 1/2 cup - Milk 1/4 teaspoon nutmeg powder Salt and pepper to taste

How to Make-

  1. Heat olive oil in a large saucepan, and sauté onion and garlic for 2 minutes. Mix broccoli, potato, carrot and sauté for 2 minutes, add water and pressure cook for 3-4 whistle until vegetables are tender.

  2. Using a hand mixer or blender, puree the mixture until smooth. Cook for 5 to 7 minutes, add 1/2 cup milk and cook for 2 to 3 minutes. You can add some boiled broccoli flower.

  3. Season with nutmeg powder and pepper.
