Carrot cake

Adding vegetables to dessert is a great way to make your favorite dessert .Carrot cake was on my mind for a long time. Finally today i made this orange colour cake. It is so simple, moist, healthy and delicious. Carrots are rich in vitamins, minerals, and fibers. Kids would love carrot cake and carrot in it.
Ingredients-
Flour or Maida 3/4 cup
Wheat flour 1/4 cup
Curd 3/4 cups
Milk 4 tbsp
Olive oil 1/4 cup
Grated carrot 3/4 cup
Sugar Powder 1/2 cup
Vanilla essence 1/2 tsp
Cinnamon powder 1/4 tsp
Ginger powder 1/4 tsp.
Baking powder 1/2 tsp
Baking Soda 1/2 tsp
Salt A Pinch
Almonds chopped 2 tab Sp.
Walnut Chopped 2 tab Sp.
Preparation-
Preheat oven at 180 degree C
Grease the tin with butter and maida.
How to Make-
Sieve maida,wheat flour with salt,baking soda and baking powder, set aside.
In a mixing bowl add curd, sugar, milk and olive oil. Mix well until cream like consistency.
Add cinnamon powder, vanilla essence and mix well. Add carrots and mix them.
Add maida and wheat flour mixture and mix with fold and cut method.
Add half quantity chopped Almond and walnut. Mix well.
Pour the batter into greased tin and bake in preheated oven, on 180 degree C for 20 to 25 minutes or until the toothpick inserted at the center comes out clean.
Allow it to cool completely. Slice it.
