Chickpea-Loaded Potatoes

Who says stuffed potatoes can't be healthy? I grew up eating fried potato snacks like potato chips, potato tikki, potato bhajias, potato cutlets etc, but over the years as a vegetarian, I found the potatoes to be a perfect and healthy vegetarian options and I always try healthy recipes with potato. This recipe is also a blend of boiled potato with protein rich chick peas, vegetables, and some spices and chutneys. It is a perfect evening snack for kids, Kids will also make it easy because not much cooking is needed. This is a simple recipe in which some assembly required.If you provide kids boiled potatoes and boiled chick peas, they can even customize the recipe, adding extra ingredients they love.

Ingredients-

Potato---------------------------3 medium size

Boiled chick peas------------ 1/2 cup

Salt ---------------------------------to taste

Black pepper----- --------1/2 t Sp.

Sweet tamarind Chutney--6 t Sp.

Green Chutney------------------3 t Sp.

Onion finely chopped--------1 small

Tomato finely chopped------1 small

Coriander leaves chopped--1 t Sp.

Hung Curd------------------------1 tab Sp.

For Masala-

Black salt--------------------------1 t Sp.

Chat masala----------------------1/2 t Sp.

red chili powder-----------------1/2 t Sp.

Amchur Powder-----------------1 tSp.

Pudina Powder------------------1 t Sp.

How to Make-

  1. Add all spices in a bowl and mix well.

  2. Peel the potatoes and cut into halves lengthwise. Place in a microwave safe bowl add water and cook on a high heat for 4 minutes.

  3. Strain water and scrape the potato leaving a thin layer inside so that it can stand up on its own. Coat with masala.

  4. In a bowl add boiled chick peas, half onion and tomatoes, green and tamarind chutneys, salt and pepper, coriander leaves and mix well.

  5. Fill potatoes with it.

  6. Garnish with little onion, tomato and one dollop hung curd. Place coriander leave over it.

  7. Serve with green chutneys.

Tips-

  1. You can fill potatoes with sprouts also.

  2. Add vegetables of your choice.
