Chinese Multigrain Namak Pare [Nimki]

Namak Paare is one of the popular Indian tea time snack. In our twist recipe we take multigrain healthy flours like oat, soya, wheat etc., which are very healthy and provide a dense texture to our nimki, and to that we add chinese masala which bring a nice aroma and flavor to the dish.

In festival time I always make big batches and my guests always admire it. This super delicious tea time snack is easy to make and requires just few commonly available ingredients. This crispy light snack has longer shelf life. You can make it within one hour and store for 15-20 days.

Ingredients-

3/4 cup Wheat Flour

1/4 cup Rice Flour

1/4 cup Soya flour

1/4 cup Maize flour

1 tab Sp. Semolina

1 tab Sp. Gram flour

1/4 cup Oat flour

2 green chili

4 Garlic cloves

2 tab Sp. Soya sauce

3-4 tab Sp. Oil

Ajwain 1 tsp.

Chinese Spice Mix Powder

salt to taste

How to Make-

  1. in a big bowl add all flours, salt, carom seeds, chili garlic paste and oil. Mix nicely.

  2. Add a few tbsp of water at a time and mix to make a tight dough. Cover the dough and keep aside for 10-15 minutes.

  3. In a heavy bottom pan heat oil.

  4. Divide the dough in equal portion and a make balls.

  5. Roll each ball into round disk.

  6. Cut the circle in diamonds or squares.

  7. Fry on low heat till golden brown.

  8. Remove from oil on a kitchen towel or tissue paper.

  9. Sprinkle Chinese mix spice over them and mix very well.

  10. Cool and store in an airtight container up to 15 days.

Tips-

  1. Dough should be tight.

  2. Fry on low heat so they get nicely cooked from inside. You can slightly increase the heat and fry until they are browned.

  3. You can use leftover Maggie masala instead of Chinese spice mix.
