Cream of Tomato soup


In India tomato soup is the most popular soup in all restaurants. It is also my favorite soup. It is a delicious and nutritious healthy tomato basil Soup made with seasonal vegetables and coconut cream . It is a perfect soup for all season but In winter I love this creamy tomato soup, this soup is warm and comforting. You can also serve this soup with a pinch of cracked black pepper and sprinkling of freshly grated Parmesan cheese. A couple tiny basil leaves to garnish is a nice option.

Ingredients-

Tomatoes-cut into big pieces----------------------------------4

Carrot-cut into big pieces----------------------------------------1

Beet Root small cut into big pieces--------------------------1

Ginger piece finely chopped------------------------------------1 inch piece

Onion finely chopped----------------------------------------------1

Garlic cloves finely chopped------------------------------------4

Basil leaves------------------------------------------------------------4

Water--------------------------------------------------------------------1 or 1/12 cup

Salt to taste

Black Pepper crushed

Tej Patta-----------------------------------------------------------------1

Butter--------------------------------------------------------------------1 tab Sp.

Coconut Cream-------------------------------------------------------2 tab Sp.

How to Make-

  1. In a pressure pan heat butter, add tej patta, ginger and garlic and saute for 2 minutes.

  2. Add onion and fry 3-4 minutes.

  3. Add all vegetables and fry for 2 minutes.

  4. Add water and pressure cook for 2-3 whistle.

  5. When cool down churn it into smooth puree, strain the puree into a heavy bottom pan.

  6. Add water, salt, black pepper and boil it, cook another 2-3 minutes.

  7. Add coconut cream just before serving, mix well.

  8. Serve hot with toasted bread.

Tips-

  1. Take bright red and ripe tomatoes.

  2. I do not add sugar but you can add sugar according to your taste.

  3. You can add olive oil instead of butter.

  4. You can add coconut milk or fresh cream instead of coconut cream.

Step By Step Recipe of Cream Tomato Soup-
