Egg less Christmas Fruit Cake

This spiced egg less fruitcake is loaded with lots of dry nuts, dry fruits and warm spices. I have tried so many recipes of egg less fruitcake but, now this is my favorite recipe This is egg free, vegan, healthy version of Christmas fruitcake. It is made with a mix of whole wheat flour and all purpose flour. For healthier option I have used olive oil instead of butter. I soaked all nuts in rum for 24 hours. You can also soak them in any fruit juice. I have used nuts like apricots, dates, cashew, almond and raisins and my favorite tutti fruiti and glazed cherries. For this egg less Fruit Cake, I have used spices like cinnamon, nutmeg, cardamom and black pepper. I also add orange/lemon zest that would add more flavor to the cake. This cake turned out really soft and packed with so much flavor!

Enjoy a slice of this fruit cake with a cup of hot coffee.

Baking time -----30 to 35 minutes

Ingredients-

For Soaking-

Raisins[seedless]---------------2 tab Sp.

Cashew nuts----------------------1 tab Sp.

Almonds-----------------------------1 tab Sp.

Dry Apricots------------------------4

Dates----------------------------------4

Truti Fruity -------------------------2 tab Sp.

Glazed cherries--------------------1 tab Sp.

Spice mix-

Green Cardamom----------------2

Cinnamon powder---------------1/2 t Sp.

Cloves----------------------------------2

Black Pepper------------------------2

Dry Ginger powder----------------1/4 t Sp.

Nutmeg Powder--------------------1/8 t Sp.

Other Ingredients-

All purpose Flour- ---------3/4 cup

Wheat Flour------------ 1/2 cup

Brown Sugar------------------------1/4 cup

Almond milk------------------------1/2 cup

Olive oil-------------------------------1/2 cup

Apple cider vinegar--------------1 tab Sp.

Baking Soda-------------------------1/2 t Sp.

Baking powder---------------------1/4 t Sp.

Vanilla extract----------------------1/2 t Sp.

Lemon peels------------------------1/2 t Sp.[optional]

How to Make-

  1. Chop Dry nuts into small pieces.

  2. In a bowl soak dry nuts, tuti fruti, glazed cherries with rum, mix well, cover and let the dry fruits for 24 hours.

  3. In a small grinder jar grind all spice into fine powder.

  4. Prepare cake tin with grease with oil or line with parchment paper.

  5. Preheat the oven on 180 degree.

  6. Sieve flours, spies and baking powder and place in a big bowl.

  7. Add soaked dry nuts with rum.

  8. Add ground brown sugar and oil and lemon peels, mix well.

  9. Add vanilla extract.

  10. In a cup add almond milk and apple cider vinegar, add baking soda and stir, add this frothing milk into cake mixture and mix very well, add more milk if needed.

  11. Pour into prepared cake tin, tap slightly so the mixture spread properly.

  12. Bake in preheated oven on 180 degree for 30 to 40 minutes according to your oven.

  13. Serve with hot Coffee.

Tips-

  1. You can add any nuts of your choice.

  2. You can use coconut milk or any milk instead of almond milk.

  3. You can skip whole wheat flour or completely make this cake with all purpose flour.

  4. If you do not like rum you can soak it in any fruit juice and place in refrigerator for 24 hours.


Step By Step Recipe of Christmas Fruit Cake

Chop Dry nuts into small pieces. In a bowl soak dry nuts, tuti fruti, glazed cherries with rum, mix well, cover and let the dry fruits for 24 hours.
