Falhari Enchiladas-



No onion, no garlic, no pulses and grains also a gluten free vegan one pot recipe. Enchiladas a popular Mexican recipe but my twist I prepare with fasting ingredients. Ingredients-

Tortillas- 1 cup sago or Sabudana flour Water- according to need Salt - to taste 1/4 tsp. Black Pepper Oil for cookin

For Filling-

2 Boiled and mashed potatoes 200 gm. Paneer grated Rock Salt- to taste 2 Green chili finely chopped 1 tab sp. coriander leaves finely chopped

for sauce-

1/2 Kg. Tomato finely chopped 2 Dry whole red chili 1/2 tsp. Cumin seeds 1 tab Sp. Sugar salt to taste 1/4 tsp. red chill powder For Topping- 1/2 cup cooking Cheese 1/2 cup Mozzarella cheese 1 cup Hung Curd 1 tab Sp. Cream

Method--

For Rotis or Tortillas-

1. In a pan mix sabudana flour, salt, black pepper and water, mix well for medium thick consistency. 2.On a hot tava spread 1 tab Sp batter and cook both sides with little oil.

For filling-

3. In a bowl add mashed potatoes, grated paneer, salt chopped green challis, mix well dough like consistency.

For Sauce- 1. In a pan heat 1 tab Sp oil, add cumin seeds and whole red chilies and saute for 1 minute. 2. Add chopped tomatoes, cover with lid and cook for 5 minute, add salt. sugar, red chili powder and cook another 5 minutes till soft. Add little water if required.

For Topping- 1. Preheat oven on 180 degree. 2. In oven proof dish add/2 cup thin sauce. 3,Top each tortilla with filling and roll up tightly, arrange in oven proof dish. Grate cheese and mix them. 4 In a bowl mix cream, hung curd and pinch of salt.

Making Enchilada-

1. Cover enchilada with sauce and sprinkle both cheeses . 2. Bake for 10 minutes or till cheese melted and bubbly. Garnish with hung curd cream mixture. 3. Serve Hot.

Tips- 1. For best taste always serve enchiladas hot. 2. You can also cook in microwave. 3. You can adjust cheese quantity as per your taste. I prefer lots of cheese. 4. If you do not eat tomato in upvas, you can use thin green chutney paste instead of tomato sauce. 5.In case of milk intolerance use vegan cheese (available on Amazon), Use boiled raw banana instead of paneer in filling.
