Gulab Phirni (Rose Flavored Cream Rice Pudding)



Phirni is a North Indian rice pudding, grounded rice is cooked with milk and served in earthen pots, I thought to give phirni a nice twist with the flavor of rose.

Ingredients-

  • Milk-1 liter

  • Rice basmati-1/2 cup

  • Sugar-2 tab Sp.

  • Rose water-1 tab Sp.

  • Almonds and pistachio -2 tab sp finally chopped

  • Gulkand-2 tab Sp.

  • Cream-200ml

  • Rose petals for garnishig

Method- 1. Wash the basmati rice 2- 3 times. Drain water and grind in a spice grinder in granules form. 2. Boil the milk in a pan and add the granulated rice. Once it starts boiling lower the heat and let it cook for 10 minutes. 3. Now add sugar and mix. Cook for another 10 minutes or till rice is completely cooked and the milk is 3/4th of the original quantity. 4. The mixture should be thick like custard. 5. Remove the pan from the heat and let it rest for 10 minutes. Firni will start becoming thick as it cools down. 6. Cool down completely and refrigerate it for 1 hour. 7. Now add Rose water, gulkand, cream and mix well. 8. Refrigerate another 2-3 hours 9. Once the firni is chilled, spoon it in to serving bowls. 10. Top with chopped almonds, pistachios and fresh rose petals. 11. Serve chilled. Tips- 1. Use whole full fat milk to achieve the creamy texture. 2. You can use Rose syrup a thick sugary syrup[ Rooh afja ] made with rose petals instead of gulkand.

Step By Step Recipe of Gulab Phirni-
