Carrot mug cake

In today's quarantine period everyone needs a little sweet treat once in a while. This carrot mug cake is truly a ‘best recipe for this time because this cake is moist healthy & easy to make in just two minutes in your microwave, using only a small amount of easily available ingredients in your kitchen and less cumbersome, just mix in a mug and bake in the microwave!

In your microwaveable mug, stir together the dry ingredients with a fork, add in the wet ingredients and whisk together until you have a smooth batter. Microwave on high for 1or 2 minutes according to your microwave voltage. Decorate with an ice cream scoop or dry nuts.

Ingredients-

1/4 cup Maida

1/3 cup grated carrot

1/4 t Sp. baking powder

1/8 t sp. baking soda

1/2 t Sp. Cinnamon Powder

pinch of salt

1/2 t Sp flex seed

1/2 tab Sp. chopped walnuts

1/2 tab sp. Sugar powder

2 tab Sp. milk

2 tab sp. oil

Few drops Vanilla essence

How to Make-

  • In a microwaveable mug mix together the flour, sugar, baking powder, baking soda, cinnamon powder, flax seeds, walnuts, salt, with a fork.

  • Add grated carrot and mix well.

  • add milk, oil, and vanilla essence and whisk until you have a smooth cake batter.

  • Microwave your cake for 2 minutes or until the cake has risen and is firm to the touch. Take care not to overcook as it will dry the cake. (The timing is based on my microwave which is 900 WATTS so check the wattage of your microwave because your timing may vary.)

  • Once cooked, top with ice cream scoop, some sprinkles, or some dry nuts.

Tips-

  • Do not over mix and don’t over-microwave! it can toughen and dry the cake

  • Take a microwave-safe bowl.

  • If you don’t have a microwave you can bake the mug cake at 350°F (180°C) for 10 minutes.

  • Microwave mug cakes are best eaten when freshly made.
