Creamy Hummus

Dairy-free, gluten-free, egg-free, sugar-free, homemade creamy hummus recipe.
Hummus is a delicious spread or dip made from chickpeas, tahini, lemon, and spices. Nowadays hummus is available in all grocery stores but once you try this homemade version of hummus, you will never go back to store-bought hummus. It is so creamy, slightly salty, and has a nice flavor of garlic and lemon.
Preparation Time-15 minute
Serving-1 cup
Ingredients-
1 1/2 cup Chic peas
1 clove garlic
1 lemon juice

1/4 cup cold water
2 tablespoons (30 ml) extra-virgin olive oil, plus more for serving
salt and black pepper to taste
How to Make-
Add chickpeas to a large bowl and cover with several inches of water for 6-7 hours
In a pressure cooker add soaked chic pea and pinch of soda boil on high heat. After one whistle reduces heat and cooks for 20 minutes.
Strain in a strainer.
In a food processor combine lemon juice, garlic, salt, add tahini and blend until the mixture is thick and creamy.
Add cold water, scrape down the food processor.
Add olive oil, blend until the mixture is super soft and creamy.
Add more water and olive oil if needed.
Scrape the hummus in a serving bowl and garnish with your choice.
Tips-
Chickpeas are an important part of hummus but if you do not like the taste of chickpea or allergic you can use pumpkin hummus, beetroot hummus, Carrot hummus.
You can store it in an airtight container in the fridge for a week.
Fresh lemon juice is really important for excellent hummus. Never use bottled lemon juice.
Olive oil makes the texture of the hummus luxurious. Add a little drizzle to the top of hummus when you serve it.
Coldwater makes Hummus fluffy and creamy.
You can add cumin powder, red chili powder for garnishing.
Tahini substitute-
If you do not have tahini you can add
Any nut butter like-Almond or Cashew butter
Any seed butter- sunflower or pumpkin seed butter
Peanut butter
Olive oil
Yogurt
