Mango Phirni


Mango Phirni is a twist on a traditional Nort Indian dessert Phirni. In this dish, mango adds a delicious touch which adds the richness. Now mango season is almost finished then you must give this recipe a try and you will absolutely love it. 


Ingredients-

  • 1/2 cup small[tukda] Rice

  • 2 tab Sp.Jaggery

  • 1 liter Milk

  • 2 tab sp. Mango Puree

  • 1/2 cup mango slices for garnishing

  • 1 tab Sp. almonds

  • 1/4 t Sp. cardamom powder

How to make-

  1. wash rice and soak in water for 30 minutes.

  2. Drain water and blend rice on a pulse. do not over blend.

  3. In a heavy bottom, pan boil the milk. add rice, let the flame simmer and cook until the rice gets soft. stir in between to avoid lumps.

  4. Add jaggery powder and cook another 4-5 minutes or until phrini gets thick.

  5. Switch off the flame and slightly cool down.

  6. Add mango puree and cardamom powder and mix well.

  7. Serve into a small glass bowl or earthen bowl.

  8. kept in the fridge for 2 hours.

  9. At serving time garnish with mango slices and chopped almonds and pistachio.

  10. Serve cold.

Tips-

  1. Do not over blend the rice. Consistency of rice should be like thick semolina or rave.

  2. Adjust sweetness according to your taste.
