Vegetable Seekh Kabab:


Traditionally seek kababs are made from minced meat and grilled in clay tandoor or oven but in this recipe, we are going to make a vegetarian version, using channa dal, lots of vegetables, and soya chunks powder. Cooked dal and vegetable mixture is shaped around the skewers and grill till crisp and golden. These veg kababs are incredibly delicious and very easy to make at home.

Ingredients-

  • 1 cup channa dal

  • 1 cup soya granules powder

  • 1 cup mix vegetables[ carrot, beans and peas]

  • 1/2 cup boiled Potato grated

  • 3 green chilies finely chopped

  • 1 tsp. ginger finely chopped

  • 1 tab sp. coriander leaves finely chopped

  • 1 tSp. kabab masala or garam masala

  • Ghee or oil

How to Make-

  1. Wash channa dal and soak for 2 hours.

  2. in pressure Cooke add cooker stand and a half cup of water.

  3. In a small pan add dal with salt, turmeric powder, and 1/2 cup water and place on cooker stand for 3-4 whistles.

  4. Immediately release pressure and take out from the cooker, cool down. mash very well or blend into the blender without water.

  5. Blend soy granules into a fine powder.

  6. In pan heat ghee or oil, add ginger, garlic, and green chili and saute for a minute.

  7. Add chopped vegetables and boiled potato and mix well.

  8. Add salt, turmeric, coriander powder, and saute for 2-3 minutes or till water evaporated from vegetables.

  9. Transfer this mixture into a mixing bowl, add in soy granules powder, prepared dal mixture and kabab masala, and mix well using your hand and it should come together like a dough.

  10. Keep the mixture aside for 20 minutes.

  11. Now shape the mixture onto ice-cream sticks or wooden bamboo skewers.

  12. Place onto a hot greased grill pan or iron tava. Brush with ghee or oil and cook for 2-3 minutes on medium flame until it turns golden brown, crisp from all the sides.

  13. Serve with green chutney, tomato sauce and onion rings.

Tips-

  1. You can also roast kababs in tandoor instead of tava.

  2. Add vegetables that have low water content like carrot, cauliflower, peas, etc.

  3. If the kabab breaks because of excess moisture add more soya crumbs.
