ice Cream Sandwiches:





Ice Cream Sandwiches with Homemade eggless chocolate cookies. It is very easy to make and you can stock them all summer long.

Ingredients for Cookies-


  • 1cup Maida

  • ¾ cup Sugar

  • 2 tsp Butter

  • 1/3 cup Olive oil

  • 1 tsp Coco Powder 1 tsp

  • Few drops Vanilla Essence

  • ½ tsp Baking Powder

  • ¼ tsp Salt

How to Make:


  1. Preheat oven to 350 degrees F (180 degrees C) and place rack in centre of oven. Place a silicone sheet or parchment paper on a baking tray.

  2. In a bowl sift flour, cocoa powder, salt and baking powder together.

  3. In another bowl add butter and sugar and beat for 5 minutes or until fluffy.

  4. Add the flour mixture and milk and stir until combined and smooth.

  5. Add vanilla essence.

  6. Spread the batter evenly in the prepared greased tray with the help of a spatula.

  7. Bake for about 10 minutes. After 5 minutes turn the tray, so one side doesn't get browner than the other.

  8. Remove from oven and place on a wire rack to cool.

  9. Cut in any shape of your choice.

  10. Spread with the ice cream.

  11. Top with the piece of cookie.

  12. wrap each sandwich in almunium foil or cling foil immediately.

  13. Place in the freezer for about two to four hours or until firm.

You can divide the dough into two parts, press each half into the bottom of the prepared baking sheets, bake for 10 minutes, cool, put them in the freezer for an additional 15 minutes, remove and spread the ice cream over it. Flip the second cookie over the ice cream layer and press down gently, cover with almunium foil and return to the freezer for at least 2 hours. slice. To cut place on a flat work surface. For custard ice cream-

Ingredients-

  • Milk-1/2 litre

  • Custard Powder-2 tab sp.

  • Sugar-4-5 tab sp.

  • Fresh cream-200ml.

How to Make-

  1. Mix custard powder in 3 tab sp of cold milk..

  2. In a pan boil milk, when the milk starts boiling add sugar and custard powder, stir well till the mixture becomes thick.

  3. cool down completely.

  4. Freeze it for half an hour.

  5. Add cream and whisk well.

  6. Pour the mixture into an air-tight freezer-safe bowl. Freeze it for 1 hour.

  7. Add in a mixer jar or using an electric beater blend it well for a creamy texture and avoid ice crystals.

  8. Repeat this step twice or thrice.

  9. Now freeze for 6 to 7 hours.

Tips-

  1. Never use runny or too soft ice cream. I always use homemade custard-based ice cream because it has a nice body.

  2. Freeze until just before serving.

  3. If your ice cream begins to soften, put it back into the freezer.
