instant chunda[Sweet and Saur Mango Pickle-


The traditional method of chunda[ cooked under sun rays] is very lengthy and time consuming, this is a quick shortcut version that is made in microwave and takes only 10 minutes to get prepared.

Ingredients-

1 kg. Grated Raw Mangoes 5 tsp Salt 1 tsp. Turmeric powder (Haldi)- 1 kg. Sugar- 11/2 tsp.​ Red chili powder 1 tsp.​ Cumin seeds powder- 3-4 tsp Fennel seed [ Sauf ] 5 Green Cardamom crushed (choti elaychi] 1 tsp. Heeng-

How to Make- 1. Wash the mangoes and dry them completely. Peel the skin of the mangoes and grate them (using bigger size grater] . 2. Combine the grated mangoes, salt and turmeric powder in a microwave safe bowl and leave aside for 5 minute. 3. Mix rest of the ingredients and cook in the microwave on high temperature for 10 min. Stir 3 to 4 times in between 2 min interval. 4. Remove it and store the Chunda in sterilized glass jars and it will last for about one year. Tips-

1. You can also cook in a pan on gas stove on medium heat. 2. Do not overcook otherwise it will crystallize later. So try to make it little bit watery. 3. If it is too watery, cook it again for 2-3 minutes. 4. Always keep it in a sterilized glass jars. 5. Always wipe the rim of the jar clean after filling and just before putting the lid on. 6. You can add dry fruits like almond and cahewnut also 7. Never touch it with wet hands or spoon.
