Jimjam coconut cookies Recipe

Light, buttery biscuits filled with the jam of your choice. This is the perfect treat for the kids in holiday season

Ingredients - Maida- 1 cup Powdered sugar-1/2 cup Butter or Ghee-1/4 cup Desiccated coconut- 3/4 cup Baking powder- 1/4 tsp. Milk- according to need Vanilla essence-1/2 tsp. Mix fruit jam- 2 tbsp.

How to Make-

1. Sieve Maida and baking powder together. 2. In a bowl, mix butter and sugar until smooth. Once smooth, mix coconut powder and essence. 3. Mix maida and milk and knead the dough. Make sure it is soft. 4. Cover in cling foil and let it chill in the refrigerator for 1/2 an hour. 5. Preheat oven at 170degreeC or 350 degree. 6. Roll the dough on a flat surface about 5mm thickness. Then cut out shapes using cookie cutter. Collect the remaining dough and repeat the process. 7. Make a small hole in the middle of half the biscuits and arrange it in a baking tray and bake for 15 to 20 mins at 180 degrees or at 170 degrees in a microwave oven. 8. Once done, remove the cookies from the oven and let them cool before you apply jam on them. 9. Place one biscuit on top of the other (on the side with the jam).Fill jam in the center. 10. Now sprinkle a little sugar on the biscuits. 11. Store them in airtight container. Step By Step Recipe of Jimjam Biscuits-
