Khichdi in Italian Style

One pot meal cooking is absolutely a magic trick to prepare full meal only in one pot with minimum preparation.This can be easy weak night meal and perfect when you are not in the mood of cooking.

Italian Khichdi is also a quick and easy dinner recipe that can be made in Rice cooker or in a pressure cooker. It is full of healthy vegetables, along with cheese and Italian herbs.If your kids are not khichdi lover, try this recipe,Its unique texture will surely be a hit.

This weekend, make hot and creamy restaurant style Italian Khichdi where we cook rice and dal together as risotto style.

Ingredients-



  • khichdi rice or Arborio Rice or-1 cup

  • Yellow Moong Dal- 1/2 cup

  • Butter or Ghee- 2 tab Sp.

  • Garlic finely chopped -1 t Sp.

  • Ginger finely chopped- 1 t Sp.

  • Green Chilies finely chopped- 1 t Sp.

  • Onion finely chopped-1

  • Cumin Seeds- 1 t Sp.

  • Turmeric Powder-1/2 t Sp.

  • Mix Italian herbs-1 t Sp.

  • Red Chili Flakes -1/2 t Sp.

  • Oregano-1/2 t Sp.

  • Salt to taste

  • Cheese- 3/4 Cup

  • Mix vegetables-1 cup

  • [like broccoli, mushroom, olives etc.]

  • Water or vegetable stalk-6 cups

How to Make in Rice cooker-

  1. Soak Dal and rice for1 hours.

  2. Heat oil or ghee, add garlic and saute for 1 min.

  3. Add onion and saute till translucent or light brown.

  4. Add all vegetables and saute for 2 min.

  5. Add soaked dal and rice and mix well.

  6. Add salt and turmeric powder and 4 cup water, mix well.

  7. start rice cooker on cooking mode.

  8. Cook till the right consistency.

  9. Once the desired texture is reached, add oregano, mixed spices and chili flakes.

  10. Add 2 tablespoons butter and cheese stir nicely.

  11. Garnish with cheese and basil leaves. Serve hot with papad.

Tips-

  1. For nice Italian texture take Arborio Rice but i made this khichdi with normal khichdi rice and result was fine.

  2. In Khichdi rice are not separated like pulav or biryani, you can adjust the water according the consistency you like.

  3. you can prepare the khichdi in pressure cooker also. In pressure cooker you should add 4 cups water and cook till 4-5 whistle. Add some more water when cooking in open pan.

  4. Add some more water if khichdi becomes too thick.

Step By Step Recipe of Italian Khichdi-
