Mango Ice cream


Rains have already started, here is last of summer special dish. This homemade mango ice cream is full of real mangoes. To minimize the sugar level I always take ripe, bright coloured, good quality mangoes. Now I am taking popular north Indian Chausa mangoes, any other variety can be taken as substitute.

This creamy two layered ice cream is so tasty, easy to make and serve with familiar flavors. Two layered ice cream is to emphasize textured mango layer, you can use your imagination to create layers of your choice.

Ingredients-

  • Mango Puree 1 cup

  • Cream 1 cup

  • Sugar 2 tab Sp.

  • Milk 1 Cup

  • Condensed milk 2 tab Sp.

  • Orange colour 2 Drops

  • Lemon juice 1 lemon

How To Make-

  1. Peel and chop mangoes into small pieces and bland into puree.

  2. In a pan add puree with sugar and cook on low heat for 3-4 minutes. Add lemon juice and mix well. Lemon juice balance the taste of the pulp. Cool down and keep it in fridge for 15 minutes.

  3. In a big bowl add cream, put on ice filled bowl and whip till soft peaks are formed.

  4. Add mango puree and condense milk, gently mix and fold them[ do not churn vigorously].

  5. Add milk and mix very well.

  6. Divide into two parts.

  7. Pour one part into fridge safe bowl, cover and keep in refrigerator until set.

  8. In another part add 2 drop orange colour and mix gently, cover and keep it in the fridge[not refrigerator].

  9. When first part set perfectly, add another part over it, cover and keep it in refrigerator until set.


How to Serve-

  1. For easy serving, take out ice cream some time before serving.

  2. Scope and serve mango ice cream with some fresh pieces of mangoes.

  3. Garnish with some dry fruits.
