Monsoon Special- Palak ki chat
A famous north indiann chat recipe, crispy, batter fried spinach leaves, served with spices, curd and chutneys. Ingredients-
Spinach leaves- 10
Gram flour[ Besan ]- 1 cup
Rice flour- 1 tb Sp.
Salt- to taste
Red chill powder- 1/2 tsp
Carom seeds [Ajwain]-1/4 tsp.
Asafoetida - 1/4 tsp.
Turmeric- 1/4 tsp
oil for frying
For Serving-
Boiled potato-2
onion -1
Tamarind sweet chutney- 2 tb sp
Green chutney-2 tb sp.
Curd-1 cup
Cumin [Jeera] powder-2 tsp.
Black Salt- 1 tsp.
Red chill Powder=1 tsp.
Sev - optional
How to Make- 1. In a bowl mix Gram flour, Rice flour, salt, red chili powder, haldi, ajwain, heeng, water and make medium thick batter. 2.Wash and dry spinach leaves. 3.Heat oil in a kadahi, Dip each spinach leaf in batter, coat besan very well and deep fry till golden brown and crispy. 4. Place on absorbent paper.
For serving-
1.Chop potato in small pieces, cut onion into thin rings. 2.Cut fried spinach into four pieces and place in a plate, cover with chopped potato and onion rings, spread some curd,tamarind and green chutney. 3.Sprinkle jeera masala, red chili powder, chat masala, Garnish with sev and coriander leaves.
tips- Dry the leaves completely before deep-frying , to get a really crispy outcome.
Step By Step Recipe of palak ki Chat-
In a bowl mix Gram flour, Rice flour, salt, red chili powder, haldi, ajwain, heeng, water and make medium thick batter. Wash and dry spinach leaves. Heat oil in a kadahi, Dip each spinach leaf in batter, coat gram flour batter very well and deep fry till golden brown and crispy.
Place on absorbent paper.
Serve as a Chat: Serve with small potato and onion cubes,salt,cumin powder,red chili powder, curd, tamarind and green chutney.
