Paneer Lasagna with Makhni Gravy

Make this super easy & cheesy vegetarian version of Indian Lasagna with Paneer and surprise your guests. Paneer lasagna is a healthy lasagna in which I have used paneer sheets instead of refined flour Lasagna sheets. It is a perfect one pot meal with lots of juicy vegetables, coated with indian spices, makhni gravy and grated cheese. The best part of this recipe is a Makhni gravy which i have shared before on our blog. This is obviously not a traditional recipe of Lasagna, it is a fusion recipe but a great way to serve lots of vegetable for your kids meal.

Most of people think Lasagna a complicated meal but trust me, in this way you can make it very easily.

Ingredients-

For lasagne sheets-

250 gm. Paneer

1 tab Sp. Olive oil

1/2 t Sp. Salt

1/2 t Sp. Pepper

For vegetable layer-

1 cup Finely chopped vegetables (zucchini, corn, peas, capsicum, carrots, etc)

1 onion finely chopped

1 tsp. olive oil

Salt and black pepper to taste

For Makhni Gravy-

1 onion finely chopped

4-5 Tomato chopped in big pieces

4 cloves Garlic finely chopped

Coriander powder 1 tsp.

Red chili powder 1 t Sp.

fresh Cream 1 tab Sp.

Soaked Cashew nut 5-6

Salt to taste

1 tab Sp. Olive oil

For Garnishing-

Mozzarella cheese 1/2 cup

Italian herbs 1 t Sp.

Basil leaves For Garnish

How to Make-

  1. According to service dish cut paneer into slices and both side sprinkle some salt and pepper.

  2. In a pan heat oil and cook sliced paneer tll golden. Keep aside.

  3. Heat some oil and and cook some onion and garlic till golden brown, Add all vegetable and sauteed for few minutes. Add salt and pepper and mix well.

  4. For makhni gravy soaked cashew nut for 15 minutes.

  5. Churn tomatoes with soaked cashew nuts into puree.

  6. In a pan heat oil, add garlic and cook for 1 minute.

  7. Add finely chopped onion and cook till golden.

  8. Add tomato puree and mix well.

  9. Add all spices like coriander powder, salt and red chili powder and cook for 5 to 7 minutes.

  10. Add water if needed.

  11. Add cream and mix well.

For Assembling:

  1. Grease a casserole dish and start by spreading some makhni gravy at the bottom of the dish.

  2. Layer paneer sheet on this sauce.

  3. Then cover these sheets with vegetables mixture. Be sure to spread it well.

  4. Sprinkle some cheese on the vegetables mixture and spread makhni gravy, making sure all cheese is covered. This is your first layer completed.

  5. Repeat this layering ending with makhni gravy.

  6. Finely cover with cheese and bake it in a preheated oven of 180’C for about 30 minutes.

  7. Garnish with Italian herbs and basil leaves.
