Paneer Pakoda

Ingredients-

  • Paneer -250 gm.

  • Gram flour [besan]- 1 cup

  • Rice flour- 2 tab sp.

  • Turmeric Powder- 1/4 tsp.

  • Red chili powder- 1 tsp.

  • Heeng- 1/4 tsp.

  • [carom seeds] - 1/2 tsp.

  • Salt- to taste

  • Chat Masala- 1 tsp.

  • Mustard oil or any oil- for frying

Paste for Filling-

  • Green chili- 2-3

  • Garlic chopped- 1 tsp.

  • Ginger chopped- 1 tsp.

  • Coriander leaves- 1/2 cup.

  • Salt -to taste

  • Lime juice-1/2 tsp.

  • Garam masala-1/2 tsp.


Method-

1. In a bowl mix all ingredients (except paneer , oil and chat masala), mix water and make thick flowing paste, rest the batter for about fifteen minutes. 2. Cut paneer into cubes; Slit each piece into half leaving one edge intact for filling. 3. To prepare paste add all ingredients in a mixer and grind to a smooth paste. 4. Stuff paste into the slit of each paneer piece. 5. Heat oil in a kadhai. 6. Dip each paneer cube in the batter, and deep fry on medium heat till crisp and golden brown. 7. Drain on absorbent paper. 8. Sprinkle chat masala. 9. Serve hot with tomato ketchup or hot and sweet tomato sauce.

Tips- 1. Mustard oil gives a very good taste and flavor but you can select oil of your choice. 2. Generally we fry pakora once, but this time fry them twice, first batch half fry, slightly press the pakoras and fry second time, till crisp and golden.

Step By Step Recipe of Paneer pakoda-
