Potato Waffles with Barbecue kidney Beans

Serves-4 Ingredients-

For Waffles-

  • Boiled Potato-3 medium size

  • Maida-2 cup

  • Baking powder-1 tsp.

  • Salt-a pinch

  • Butter-4 tab sp.

  • Milk-1 1/2 cup

For Beans-

  • Cooked Kidney Beans-2 cup

  • Cooking Soda-a pinch

  • onion-1 finely chopped

  • Garlic-2 cloves, peeled and finely chopped

  • Tomato-2 big in size, finely chopped

  • Barbecue sauce-2 tab sp.

  • Olive oil-1 tab sp.

  • Soy sauce-2 tab sp.

  • Brown Sugar-1/4 cup

  • Salt to taste

  • Black pepper to taste

Special equipment- Electric Waffle iron or waffle mould [ available on Amazon]


Method- For Waffles-

  1. Preheat oven on 200 degrees C

  2. .Mash the Potatoes.

  3. In a large mixing bowl add mashed potato, maida, baking powder, salt, melted butter and mix well.

  4. Add milk until having a smooth batter.

  5. Grease waffle mould with little butter.

  6. Add some batter into it and cook in preheated oven on 200 degrees C for 10 to 12 minutes or until golden brown.

For Kidney Beans-

  1. Soak kidney beans for 4-5 hours.cook in a pressure cooker with a pinch of baking soda for 1 whistle on high heat, reduce heat and cook on low heat for 10 minutes.

  2. Drain water.

  3. Heat the olive oil in a large pan and add chopped garlic and saute for 1 minute.

  4. Add chopped onion and cook till they turn golden brown.

  5. Add chopped tomatoes and cook another 2-3 minutes.

  6. Add salt, pepper, brown sugar, soya sauce and barbecue sauce on low heat, till the sauce become thick.

  7. Add cooked beans and further cook on low heat for 10 to 15 minutes.

For Serving- Serve waffles, topped with hot barbecue kidney beans and grated cheese. you can also serve with fresh salad.

Tips-

  1. You can also add 2 egg yolks into the batter.

  2. Do not overcook kidney beans.

  3. If you are using waffle iron, Heat the waffle iron according to the manufacturer’s instructions. Once heated, brush the iron with vegetable oil or butter, fill it with batter, close the lid, and cook until the waffle is golden brown.

  4. It can be made in advance, reheat and serve.

  5. You can take wheat flour instead of maida or half maida and half wheat flour.
