Puffed Rice Bar and Laddoo-

Healthy, light on the stomach, traditional winter sweet, easy to make with minimum ingredients.

ingredients-

  • Puffed rice or Murmura-100 gm

  • Jaggery-200 gm.

  • Ghee- 1 tsp.

  • Crushed Green cardamom seeds-1 tap.

  • Dry nuts[ almonds, cashew nuts raisins, coconut pieces etc]. optional

How to Make- 1. Rost Puffed rice[ Murmure] in microwave on medium heat for 1 minute. 2. In a deep pan add ghee and Jaggery and melt on low flame for 2 minutes.stir continuously. 3.Reduce the flame and cook till 2 hread consistency..[ To test, add few drops of jaggery syrup in the cold water.if the syrup can be rolled to a round pushed with fingers,the syrup is ready.] 4.Add murmura, Add cardamon seeds and chopped nuts. Mix quickly 5.Switch off the heat and cool down the mixture little. 6.For making laddoo take little water in a bowl. Grease your palm with water, take a small portion of the mixture and roll it into ball. 7.For bar put the entire mixture on the silicone sheet or grease parchment paper . Roll it out thinly using a greased rolling pin. 8.Cut them into square pieces using a sharp knife. 9.Keep ladoo or bar open for some time, approximately 1-2 hours. 10. Store it in airtight container. 11.Consume it for 1 month.

Tips-

  1. For melting jaggery flame should be low.

  2. The consistency of jaggery syrup is very important. It should be one thread consistency. If it becomes more hard or soft, making laddoo will be difficult.

  3. Make laddoo quickly, before the mixture cool down, it will become hard and crisp.

  4. For bar spread mixture quickly, and cut mark with knife.

  5. Cool down completely, store in air tight container.
