Raw Jack fruit mango Pickle

Jack fruit is a largest tree fruit in the world. Jack fruit [kathal or Fanas] is a seasonal vegetable available during summer season in India. In North India raw jack fruit is used and also called raw vegetarian mutton.

jack fruit is high in magnesium, vitamin B6, and antioxidants. It is rich in fibers, very helpful in constipation. It enhances immunity, boost magnesium levels, improve digestion, reduces risk of Cardiovascular Disease and prevent Osteoporosis.

My family looks forward to Jack fruit season for all the recipes I make out of raw Jack fruit Kababs of raw jack fruit are the best vegetarian kababs. Pickle of Jack fruit is very easy to make. Every summer I make this pickle with grated mangoes.

How to Cut Raw Jack Fruit-

The skin of unripe jack fruit must be peeled first,The covering of jack fruit is very hard and prickly, take a big sharp knife and cut in center into two halves, remove center white hard partition and discard it, then chop remaining jack fruit flesh into small pieces and boil it. Flesh and seeds, both are used in cooking. Seeds have a covering on it, remove this before cooking.

Ingredients-

  • 1/2 Kg. Raw Jack Fruit

  • 1/2 Kg. Raw Mango

  • 1 tab Sp. Fennel seeds

  • 2 tab Sp. Mustard seeds

  • 1 Tsp. Cumin seed

  • 1/2 tab Sp. Fenugreek seeds

  • 1/2 tsp. Onion seeds [kalonji]

  • 1/2 tsp. Heeng

  • 2-4 tsp. Red chilli Powder

  • 2 tsp. Turmeric Powder

  • Salt to taste

  • Mustard Oil

How To make-

  1. Dry roast fennel seed,onion seed, fenugreek seed,cumin seed cool down and roast coarse powder.

  2. Grate raw mango, add 3 tsp. salt and 1 tsp. turmeric powder and mix well, keep in sunlight for 2-3 hours.

  3. In mean while boil jack fruit pieces with 1 tsp. salt, 1 tsp. turmeric powder and some water in pressure cooker for 1 whistle. Switch off the flame and remove steam, strain all water. Base of the jack fruit pieces should be soft.

  4. Spread under sun light for 1-2 hours till extra moisture will be evaporated.

  5. Strain water of grated mangoes, keep water for further use.

  6. In a big vessel Mix jack fruit, mango, all spices and mix well.

  7. Add some mustard oil and mix very well.

  8. Fill in a clean, dry, sterilized glass jar, Add more mustard oil and cover with muslin cloth and keep it in sunlight for 3-4 days.

  9. Enjoy the pickle throughout the year.

Tips-

  1. Always take white raw jack fruit, yellow semi ripe is not suitable for pickle.

  2. Do not over boil the jack fruit.

  3. Do not dry too much otherwise pickle pieces will not be soft after maturing.

  4. Mustard oil is best for pickling, but you can use any other oil for your choice.

  5. Pickle should be covered with oil.

Grate raw mango, add 3 tsp. salt and 1 tsp. turmeric powder and mix well, keep in sunlight for 2-3 hours.n mean while boil jack fruit pieces with 1 tsp. salt, 1 tsp. turmeric powder and some water in pressure cooker for 1 whistle. Switch off the flame and remove steam, strain all water.

Spread jack fruit and mango under sun light for 1-2 hours till extra moisture will be evaporated. In a big vessel Mix jack fruit, mango, all spices and mix well. Add some mustard oil and mix very well.
