Raw Papaya soup



Winter Special-

in winter, there’s nothing better than a big bowl of hot soup.This raw papaya soup is low in calories, fat-free, cholesterol free, and an excellent source of potassium, fiber, vitamin E and C.

Ingredients-

Vegetable stock-2 cup papaya slices- 2 cup Onion- 1 finely chopped Garlic- 1 clove finely chopped Tomato 1 finely chopped Water- 1 cup Salt- to taste Pepper- 1 tsp. Cream- ½ cup

How To Make-

1. Peel Papaya and scrape seeds out. Cut into chunks. 2. In Pressure cooker heat butter, add onion, garlic and saute for 1 minute. 3. Add Papaya chunks and saute for 2 minutes.Add tomato and mix well. 4. Add vegetable stock and salt, pressure cook for 2-3 whistle. 5. Remove from heat, release steam and use a hand blender to blend until smooth. Add water if required. Boil one more time. 6. Season with pepper, stir through cream (never boil soup after adding cream, cream will split). 7. Serve soup into bowls, drizzle over a bit of cream, sprinkle with pepper and parsley.Serve hot.

1. You can make papaya soup without cream, because it's so thick and has such a great flavor.

2.Good Vegetable stock is key ingredient of this soup.

3.Always take Papayas that are hard green .4. You can serve soup with bread croutons.
