Samosa is a favorite dish of all north Indians. Here is a simple and new version Potli samosa. These Potli Samosas are easy to make unlike the regular samosa.
1 cup Maida (all purpose flour)
1 tbsp ghee or oil
Oil to fry samosas
Salt to taste
2 medium (boiled) Potato
¼ cup Green peas
1 tsp. Ginger finely chopped
2 Green chilly (finely chopped)
1 Sp kashmiri red chill powder
1/2 Sp. Asafoetida
3 t Sp. Coriander Powder
¼ t Sp Garam masala
2 tab Sp. Green coriander (finely chopped)
1 tab Sp. Dry Mint Powder
2-3 tsp. Dry Mango powder
How to Make-
For the Dough-
Mix flour, salt, and oil in a bowl.
Mix nicely with the tips of your fingers.
Add water and make a stiff dough.
Cover and keep the dough for 15 minutes.
For the filling-
In a pan heat oil
Add asafoetida, zeera ginger and green chilies, saute for one minute.
Break the boiled potatoes and add them in the pan.
Add the green peas. Mix nicely and cook for a minute.
Add red chili powder, salt, coriander powder, garam masala, pudina powder and dry mango powder.
Cook for 8-10 minutes on medium heat.
Add fresh coriander mix and slightly mash them.
Remove from heat and let cool for 10-15 minut
How to Make Potli-
Divide the dough into 8-10 parts.
Roll each part into a 6-7 inch disc.
Keep a portion of filling in the center.
Apply maida mixture on the circumference of the circle if needed.
Bring the ends together to make a potli.
in a heavy bottom pan,heat oil.
When the oil is little hot, add the potlis in the oil.
Fry the potli's first on low heat, after some time Increase the heat to medium and fry till the potli's are golden brown.
Serve hot with green chutney and tamarind chutney.
Make stiff dough. If the dough is soft, the texture of the outer skin will not come good.
You can keep little dough for making the potli's dori, Roll into a thin rope and wrap it around the mouth of the potli.
To make the potli samosa crispy always fry them first on low heat than on medium heat.
