Semolina cake [basbousa]

Basbousa, a Middle Eastern semolina cake soaked in a sweet syrup and flecked with coconut, fresh fruits or dry fruits.This cake is very popular all over the Middle East and every country makes it a bit differently.

This is my favorite cake,

Reason one is that It is so easy to make, we add all the ingredients into a bowl, stir, and bake.

Secondly it is very healthy and light to eat because in this cake we add curd, because of this, it is very moist and soft, flavored sugar syrup adds nice aroma in it.

Third, this cake needs no dressing, it can be served with fresh fruits or some dry nuts.

You may find Basbousa a very suitable sweet for festivals with a subtle look of bakery.


Ingredients-

  • Fine Semolina 1 cup

  • Coarse Semolina 1 cup

  • Sugar 1 cup

  • Curd 1 cup

  • Butter 3/4 cup

  • Milk 1/3 cup

  • Baking Powder 1 tsp.

  • Coconut grated 2 tab Sp.

  • Almonds flakes 2 tab Sp.


For Sugar Syrup-

  • Sugar 1 1/2 Cup

  • Water 1 1/2 Cup

  • Cinnamon Stick 1

  • Lemon Juice 1/2 Sp.

How to Make-

  1. In a bowl add sugar powder and curd and beat well.

  2. Add both type of semolina, baking powder and milk, mix well.

  3. Add melted butter and continue mix until fully combined,cover and rest the batter for 15 minutes. The mixture should be pouring consistency.

  4. Transfer the mixture into greased baking tin.

  5. Bake in the 180 degree preheated oven for 30 minutes. Transfer baking dish on the top rack of the oven, so that the top of the basbousa gains color. Watch carefully. When ready, remove from oven.

How to make Sugar Syrup-

  1. When cake is baking prepare sugar syrup.

  2. In a pan add sugar, water and cinnamon stick and boil till sugar dissolve.

  3. Cook another few minutes on low heat.

  4. Remove from heat and add lemon juice and mix well.

  5. Cool down completely and remove cinnamon stick.

How to Serve-

  1. When cake is removed from the oven, pour the cool syrup on the hot cake. Cool down completely, syrup must be absorbed into the cake.

  2. Garnish with coconut shaves and almond flakes.

Tip-

  1. For best result, prepare cake for one hour before serving.

  2. You can make sugar syrup of your choice like rose syrup, lemon syrup or orange syrup.

  3. After keeping in refrigerator, you can consume this cake for 3-4 days.
