Spinach Corn Quesadillas:


A quesadilla is a Mexican dish made with a tortilla a flatbread of wheat or corn flour, stuffed with cheese and vegetable filling. It is a type of cheese sandwiched between two pieces of warm, toasted tortilla bread.

Spinach Corn Quesadilla filled with cottage cheese, spinach and corn make it a very healthy meal.

ingredients-

For Tortillas-

wheat flour-1cup

1/2 tsp salt

1 tsp oil

Water for kneading the dough

For Filling-

  1. 1/1/2 Cup Spinach chopped finely

  2. 1 cup Corn boiled

  3. 1/2 cup cottage cheese cut into small pieces

  4. 1/2 cup mozzarella cheese

  5. 1 cup white sauce

  6. Oil or butter

For White Sauce-

Ingredients-

  • 2 tablespoons butter

  • 2 t Sp. all-purpose flour

  • 1/4 teaspoon salt

  • 1/4 t Sp. Black pepper

  • 1 cup milk

How to Make-

For the tortillas:

  1. In a bowl take flour, salt and oil mix it well and knead a soft dough and keep aside.

  2. Divide into equal-sized balls.

  3. Roll out in a medium-size thin chapati.

  4. Heat a pan or tava, add few drops of oil then cook the tortilla from both sides on medium heat.

For stuffing

  1. Wash the spinach leaves nicely and chopped finely.

  2. Heat oil or butter in a pan over low heat. Add corn and cook until soft.

  3. Add Spinach, mix well, add salt and pepper and cook till water totally evaporate.

  4. Add paneer cook another 2 minutes.

For White Sauce-

  1. In a pan stir the butter and flour together with a wooden spoon or wire whisk.

  2. Pour milk, stir constantly, so no lumps form.

  3. Add salt and black pepper, mix well.

For Serving-

  1. Place tortillas, top evenly with spinach corn mixture and cheese. place another tortilla over filling, pressing firmly.

  2. Cook on a hot pan or tava with little oil or Bake at 400° for 10 minutes or until tortillas are crisp and cheese melts.

  3. Cut each quesadilla into 4.

  4. Serve with salsa sauce.
