Stuffed Bell Pepper




Traditional Stuffed bell pepper get a healthy makeover. These cheesy, corn, broken wheat stuffed pepper are loaded with flavor and perfect starter for dinner.

The filling of bell pepper is very healthy with wheat dalia and lots of vegetables.Wheat dalia satisfy your carbs craving and perfect dinner recipe with a hot cup of soup.

Serves- 4



Ingredients-

  • 4 Bell pepper or capsicum

  • 1/2 cup Broken wheat [dalia]

  • 1 tsp. Butter

  • 1 small Onion finely chopped

  • 1 Carrot grated

  • 1/2 Red bell pepper finely chopped

  • 1/2 cup boiled Sweet corn kernels

  • 2 tsp. Olive Oil

  • 1 tsp. Garlic finely chopped

  • 1 tsp. Ginger finely chopped

  • 1/2 cup Mozzarella Cheese

  • 1 tab Sp. Mayonise

  • 1 tab Sp. Hot and Sweet sauce

  • 1 Tsp. Oregano

  • Salt and Pepper to taste

Preparation-

  1. Heat the oven and prepare baking dish- Arrange a rack in the middle of the oven and heat 350 degree F.

  2. Cut Bell pepper in halves and remove seeds. Season the inside of each pepper generously with salt and pepper

How to Make-

  1. In a pressure cooker heat butter, add broken wheat or dalia and roast till golden.

  2. Add 1 and half cup of water and cook for 2-3 whistle.

  3. Place halved bell pepper in a lightly greased baking dish and bake on 200 degree till tender.

  4. In a pan add olive oil, add ginger and garlic and saute for 1 minute.

  5. Add onion and saute for 1 minute.

  6. Add carrot, red capsicum and corn kernels and saute for 2 minutes, add salt and pepper and mix well.

  7. In a dalia mixture add mayonnaise and 1 tsp. hot and sweet sauce and mix well.

How to Fill-

  1. Add 1/2 tsp. hot and sweet sauce in the bottom of the bell pepper.

  2. Fill dalia mixture in bell pepper.

  3. Add vegetable mixture over it.

  4. Sprinkle oregano and grated cheese and some red chili flakes.

bake another 3-4 minutes till cheese melt.

Tips-

  1. You can add vegetables of your choice.

  2. You can fill oats or quinoa instead of broken wheat.

  3. Bake until the peppers are softened but not mushy.

  4. The peppers can be stuffed and refrigerate up to 1 day ahead.

Step By Step Recipe of Stuffed Bell Pepper-
