Sweet Raw mango Chutney


It is that time of the year when we all are makings raw mango pickles. I made a small batch of my favorite mango chutney. It is sweet, delicious and easy to make raw mango chutney also known as aam ki launji or aam ka meetha aachar. This mango chutney stays throughout the year and goes very well with mathri or puri.

Ingredients-

Raw mangoes-----------------1/2 Kg.

Mustard oil---------------------2 tab Sp.

Onion Seeds--------------------1/2 tsp.

White Pepper powder------1/4 t Sp.

Black pepper powder-------1/4 t Sp.

cardamom powder-----------1 t Sp.

Cinnamon powder------------1/2 t Sp.

Fennel seeds---------------------1 t Sp.

Cloves------------------------------5-6

Nutmag powder--------------- 1/4 t Sp.

Cumin seeds---------------------1/2 t Sp.

Fenugreek seeds----------------1/4 t Sp.

Turmeric powder------------- 1/2 t Sp.

Red chili powder-------------- 1/2 t Sp.

Salt-----------------------------------2 tsp.

Black salt---------------------------1 t Sp.

Jaggery or Sugar-----------------1/2 kg.

How to Make-

  1. Wash and peel the mangoes and thinly slice them.

  2. In a pan, heat oil, add cumin seeds,fenugreek seeds, fennel seeds, onion seeds, and let the seeds sizzle for few seconds.

  3. Add mango slices and mix well.

  4. Add in the turmeric powder, red chili powder and salt. Toss to combine until all the mango pieces are well coated with the masala. Cook 2-3 minutes.

  5. Then add in the sugar and mix well.

  6. Add cloves, white, black pepper powder, cinnamon powder, nut meg powder and mix well.

  7. Cover the pan with a lid and cook on low heat until the mango pieces will be soft.

  8. Allow it to cool. The chutney will thicken more as it cools down.

  9. Add green cardamom powder and mix well.

  10. Store in airtight sterilized glass bottle.

  11. It stays well throughout year without refrigerator.

Tips-

  1. Always take raw, white, crisp mango,Totapuri mango or Rajapuri mangoes are the best mangoes for this pickle.

  2. You can adjust spices and sugar according to your taste.

  3. For healthier option you can add jaggery instead of sugar.

  4. If using jaggery, grate the jaggery.

  5. Always store clean, dry, sterilized jar.
