Tomato Spinach bake

Layer of baked tomato, spinach and cauliflower, topped with bread crumbs for a nice crunch.

it is full meal dinner recipe but you can serve it with side dish with any meal. Garlic bread makes an ideal accompaniment to this recipe.

Ingredients-

Tomato------------------------2

Cauliflower florets -------1 cup

Dry Basil------------------------5

Spinach finely chopped--1 cup

Butter---------------------------2 tab Sp.

Whole wheat Flour---------1 tab Sp.

Milk------------------------------1 1/2 Cup

Salt-------------------------------to taste

Black Pepper-----------------to taste

Turmeric powder-----------1/4 t Sp.

Red chili flakes---------------1 t Sp.

Parmesan Cheese-----------1 tab Sp.

Processed Cheese-----------1 small cube

Mozzarella cheese-----------1/4 cup

How to Make-

  1. Preheat oven.

  2. Blanch cauliflower with little salt and turmeric water, drain water and keep aside.

  3. Lightly grease a casserole dish.

  4. First layer-Cut tomatoes in roundels and arrange in a baking dish, seasoned with salt and black pepper.

  5. Second Layer-Spread chopped spinach over it.

  6. Third Layer-In a pan heat butter and roast wheat flour for 1-2 minutes on low heat.

  7. Whisk the flour into the melted butter.

  8. Add the salt and ground black pepper.

  9. Slowly add milk, stirring constantly until slightly thick and smooth.

  10. Add blanched cauliflower and mix well.

  11. Add salt and red chili flakes.

  12. Add shredded processed cheese and Parmesan cheese on it.

  13. Spread over spinach layer.

  14. Spread shredded Mozzarella cheese over it.

  15. Sprinkle and bread crumbs.

  16. Drizzle a bit of olive oil across the entire casserole.

  17. Bake for 30 minutes on 200 degree F, until topping is crisp and golden.

  18. Sprinkle fresh basil leaves before serving.

  19. Serve as a main dish or a side dish to any meal.

Tips-

  1. You can add broccoli florets instead of cauliflower.

  2. You can adjust cheese according to your taste.

  3. You can use self raising flour or maida instead of whole wheat flour.

Step By step recipe of Tomato Spinach Bake-
