Upvas Custard

This time try an amazing dessert for Upvas. It is very simple to make and taste better than traditional custard. It is also an amazing dessert for get-togethers and summer parties and it is loved by kids also.

Ingredients-

  • 1 litre Milk

  • 2 tab Sp. sago or Sabudana Flour

  • 1 cup seasonal fruits chopped into small pieces

  • 1 tab Sp. Dry nuts finely chopped[ almonds,cashewnuts,Pista etc.]

  • 1 t Sp. Chironji

  • 1 tSp. Rasins

  • 2-3 tab Sp. Rose syrup

  • 2 tab Sp. Suger

How to Make-

  1. Let the milk come to boil.

  2. Mix the Sabudana flour with 1/2 cup milk or water till smooth.

  3. Add to the milk and simmer on a low flame for 5 minutes.

  4. Add the sugar and continuously keep stirring till it becomes slightly thick.

  5. Remove from heat and keep aside to cool down completely.

  6. Add rose syrup and keep it in refrigerator for 1 hour.

  7. Add fresh cream and mix very well.

For Serving-


  1. Chop seasonal fruits like banana, mango, apple, kiwi etc.

  2. In a serving bowl add chopped fruits, add some dry fruits, and fill with custared.

  3. Garnish with fresh cream, Dry nuts and rose syrup.

Tips-

  1. You can add jaggery powder instead of suger.

  2. Always dilute sago flour using cold or room temperature milk otherwise it will turn lumpy.

  3. Keep stirring it continuously otherwise this pudding will stick to the bottom of the pan.

  4. If your custard has a very thick consistency, then add some milk in it.

  5. You can also flavors such as saffron or cardamomom.

  6. I used full cream dairy milk in the recipe but you can replace it with cow milk.

  7. I used Amul cream but if you are health conscious, you can skip this step.

  8. Never refrigerate sago custard with fruits, it would turn watery and blackish.

  9. You can store this custared in refrigerator in an air-tight container without the fruits. It stays fresh for 6-7 days. Add chopped fruits right just before serving.
