A healthy home made samosa, crisp from outside and tasty, healthy filling inside. Samosas are by far the most popular snack of India, popular across the world. , There are no other snack that couple as perfectly with tea as samosa. An evening chat party, at the street corner khoka, or a sophisticated business meeting the call for a samosa remains a constant. Now days there are so many different variants of samosas like chowmein samosa, pasta samosa, chocolate samosa, paneer samosa etc.

For perfect samosa every thing is very important, perfect crust, filing, amount of fat and water, dough consistency, and rolling method. Follow ingredients and tips section also.

Preparation Time -30 min.

Rest time -30 min.

Cooking Time -15 min.

Total Time -1 hour 15 min.

Serving -12 to 14 samosas

INGREDIENTS-

For Samosa crust-

  • 2 cup Maida

  • 5 tab Sp. Ghee or oil

  • 5 tab Sp. water

  • 3/4 tsp. salt

For Filling-

  • 1 cup Soya Granules

  • 1 Onion finely chopped

  • 1/2 cup Boiled Peas

  • 1 Boiled and mashed potato

  • 1 tsp. Ginger finely chopped

  • 1 tsp. Garlic finely chopped

  • 1 tsp. Green chili finely chopped

  • 1 tab Sp. Soya sauce

  • 1 tsp. Green chili sauce

  • 1 tsp. red chili sauce

How to Make-

For Crust-

  • in a big bowl add maida, salt and ghee or oil, rub maida and ghee like bread crumbs consistency.

  • Add water little by little and make stiff dough. cover with wet muslin cloth or cover with cling foil and rest for thirty minutes.

For Filling-

  1. Soak soya granules in hot water for half an hour, strain water and squeeze.

  2. In a pan heat oil, add garlic, ginger, green chili and saute for 1 minute.

  3. Add onion, saute till brown.

  4. Add boiled peas, mashed potatoes and cook another 2 minutes.

  5. Add salt, pepper and squeezed and crushed soya granules, cook another 3 minutes.

  6. Add sauces and mix well.

  7. Cook until mixture dry and crisp.

For Samosa-

  • After thirty minutes divide the dough into equal portion approximately 6 balls.

  • Roll smooth balls between your palm.

  • Roll it with rolling pin into small disc.

  • cut into two halves.

  • On the straight edge add some water and make a cone.

  • press the edges and stuffed the filling.

  • Apply little water on open edge and press the open edges with little pleat.

  • prepare all samosas and cover with kitchen towel.

  • Place on baking sheet lined tray, brush some oil on samosas and bake on 180 degree F for 15 to 20 min or until crisp and golden brown.

  • Serve with Green chutney or red chili sauce.

Tip-

  1. To freeze place them zip lock bag or airtight container and bake or fry when needed.

  2. You can add spices like dhania powder, chili powder, dry mango powder instead of sauces.

  3. You can deep fry the samosas or also cook in air fryer.

  4. You can add vegetables of your choice like carrot, capsicum etc.

  5. You can also make these samosa with readymade samosa patti

Step By Step Recipe of Keema Samosa-
