Vegetable Appam

Vegetable Appam has always been the most popular and healthy recipe for breakfast. This is a instant variation to the traditional recipe of appams. In this version we are using semolina or rava instead of idli batter and few chopped veggies are added. The best part of this recipe is, it requires less oil and few minutes for making them.These can be served in morning or evening and can even be packed for lunch box.

Total Time---------------50 minutes Ingredients-

Semolina or Rava------------------------1 cup

Curd------------------------------------------1/2 cup

Water--------------------------------------- 1/2 cup

Carrot grated-------------------------------1

Cabbage finely chopped----------------1/2 cup

Capsicum finely chopped---------------1 small

Onion finely chopped---------------------1

Green chili finely chopped-------------- 1

Salt ---------------------------------------------- to taste

Black pepper powder--------------------- 1/2 t Sp.

Eno powder-----------------------------------1 small sachet or 1 t Sp.

Cooking oil------------------------------------1 tab Sp.

How to make-

  1. In a big bowl add Semolina, curd, salt, black pepper water and mix well to make a lump free batter.

  2. Keep the batter aside for 1/2 an hour.

  3. After half an hour check the consistency of batter, it should be like idli batter. If required add water accordingly.

  4. Add all chopped vegetables and mix well.

  5. Mix eno powder into little water, add to the batter and mix again. 

  6. Take an appam pan, brush appam cups with little oil and heat over medium flame.

  7. Add batter in each cup and cover with a lid. Let it cook at low flame.

  8. After 2-3 minutes, add little oil on top of appam and flip them, appam has turned golden Cover the lid again and let it cook for 2-3 minutes or until they are golden.

  9. Serve with coconut chutney or green coriander chutney.
