Vegetable Minestrone Soup

Minestrone is a hearty Italian vegetable soup made with tomato, vegetable stock and pasta or rice. This vegetarian minestrone soup is one pot meal, super easy and packed with delicious flavors. I am a lover of Italian food and every time when I go Italian restaurant ordered Minestrone soup but this time, I thought, I should make it at home. and it turned out wonderful!

Traditionally it was made to use up leftover vegetables, so i used vegetables which are available in my kitchen like potato, zucchini, carrot, capsicum etc. I used fresh beans instead of canned beans but you can use canned baked beans to cut your time. The remaining ingredients are basic ingredients including Tomatoes, pasta, basic spices and onions.

Ingredients-

Tomato------------------------------------------------------6

Spring onions---------------------------------------------3

Mix veg[zucchini,carrot,broccoli, capsicum]--1 cup

Baked beans-----------------------------------------------2 tab Sp.

Marconi------------------------------------------------------1/4 cup

vegetable Stock-------------------------------------------2 cup

Olive oil-------------------------------------------------------2 tab Sp.

Onion finely chopped---------------------------------- 1 small

Basil leaves-------------------------------------------------- 6

Bay leaves----------------------------------------------------1

Parmesan cheese.-----------------------------------------1 tab sp.

Salt and black pepper-------------------------------------to taste

How to Make-

  1. In a shallow microwave safe bowl, place tomatoes and microwave on a high heat for 4-5 minutes.

  2. Cool down, peel and puree. Strain into a sieve.

  3. In a pan heat oil, saute garlic and ginger for 1 minute.

  4. Add onion and cook till translucent.

  5. Add carrot, capsicum, broccoli, zucchini and basil leaves, cook little tender.

  6. Add baked beans and cooked pasta and mix well.

  7. Add the salt, bay leaves and red pepper flakes. Season generously with freshly ground black pepper.

  8. Add tomato puree and vegetable stock, raise heat to medium-high and bring mixture to a boil, Reduce heat and cook another 2-3 minutes.

  9. Remove the pot from the heat, then remove the bay leaves, add tablespoon of olive oil. Garnish with Parmesan cheese.

Tips-

  1. Always take macaroni or elbow pasta because it is tiny and perfect in this minestrone soup.

  2. Add some cheese in vegetable stock, it made the soup very flavorful.

  3. If you make dairy free or vegan soup, do not add cheese.

  4. You can add vegetables of your choice like green beans or peas, spinach or kale, zucchini etc

Step By Step recipe of Minestrone Soup-
