Whole Wheat Coconut Cookies



Coconut Cookies are most popular cookies among all age groups. they are easy to make with few ingredients and short time of only 20 minutes. For healthier option we always use whole wheat flour and brown sugar for these cookies. I do not use baking powder or baking soda and instead take healthy ingredients like whole wheat flour, brown sugar, butter and coconut.

preparation time:   10 mins cooking time:   10 mins Makes 10-12 cookies

Ingredients-

  • Whole wheat flour 1 Cup

  • 1 cup Whole Wheat Flour

  • 1 tab Sp. Semolina

  • 1/2 Cup Brown Sugar Powder

  • 1/2 Cup Butter

  • A pinch Salt

  • 1 Cup Desiccated Coconut powder+ 1 tab Sp. for coating

  • Few drops Vanilla essence

  • 2 tab Sp. Milk if required



How to Make-

  1. In a food processor or a big bowl add brown sugar powder and butter and Beat well until it becomes light and creamy.  Add salt, vanilla extract and mix well.

  2. Now add the whole wheat flour, salt, semolina, and desiccated coconut and vanilla extract and mix well.

  3. Add milk little by little if required and mix well to get a soft and smooth dough.

  4. wrap with cling foil and keep in refrigerator for half an hour.

  5. Roll out small balls, press it gently and flatten it.

  6. Roll out cookies in the coconut powder and place them on the baking tray around 1-inch apart from each other.

  7. Place the baking tray in the middle rack and bake them at 180-degree centigrade for 8 to 10 minutes until cookies starting brown in color.

  8. Remove them from the oven and allow them to cool down for 2 – 3 minutes.

  9. At this stage, the cookies will be soft.  Remove them and allow them to cool and they will become crunchy.

  10. Store them in an air-tight container.
