Whole wheat Mathri

Mathri is a very popular north indian, deep fried snack,made with maida, semolina, ghee and some spices but baked one with whole wheat or multigrain flour is a healthy and easy version of deep fried mathris. It can be made in bulk and store in air tight container for a month.This is perfect snack for any festival and serve with pickle.

Now days we serve store bought biscuits with tea but I think there is no comparison between mathris and biscuits. Mathri is a more healthier teatime snack or mid meal snack.

Ingredients-

Whole Wheat Atta----------------------------4 Cup

Semolina-----------------------------------------1 Cup

Oil or Ghee --------------------------------------1 cup

Oil---------------------------------------------------For Frying

Salt--------------------------------------------------to taste

Carom seeds------------------------------------1 to 1 1/2 t Sp.

How to make-

  1. In a big bowl add maida, semolina,salt,ajwain and mix very well.

  2. Add ghee or oil and rub the ghee very well into flour with your finger tips till become like bred crumbs.

  3. Add little water at a time and and mix the dough[ do not kned like roti] till the all mixture can be mix together like a ball.

  4. Make small balls. Roll between palms.

  5. Flatten the ball and roll thick puri.

  6. Prick little holes with forks.

  7. Heat the oil and add mathris into it.

  8. Fry the mathris on low or medium heat oil till crisp and golden.

  9. You can also bake these mathris on 180 degree for 25 minutes, after 10 minutes turn the mathris and bake till golden.

  10. Fry or bake the Mathris in batches.

  11. Serve crispy mathris and pickle with hot cup of tea.

Tips-

  1. You can add black pepper or kasori methi in it.

  2. You can replace wheat flour with multi grain flour.
