Yam [Suran] Cutlet

Suran, Jimikand yem or elephant foot is a tuber, this vegetable might not look as appealing as other vegetables but due to lots of health benefits, we must include Suran in our diet. it is a very light vegetable and full of good gut bacteria. Long term consumption can help make your skin smooth and soft. It is very good for those who are suffering from obesity, heart diseases and diabetes.

Serving 10 cutlets

Ingredients:

  • 250 Gm. Suran or Yam cut into pieces

  • 1/2 cup Channa Dal

  • 1 onion finely chopped

  • 1-inch ginger grated

  • 1 tsp. garlic finely chopped

  • 1 t Sp. green chillies finely chopped

  • 1 tab Sp. coriander leaves finely chopped

  • 1 tsp. red chilli powder

  • 1 tbsp. rolling oats

  • 1 t Sp. Garam masala

  • 1/4 tsp. turmeric powder

  • Salt to taste

  • 1 t Sp. cornflour

  • 1 tab sp, Soya granules

  • Oil for frying

How to Make-

  1. Suran or Jimikand can be a little hard to cut, thoroughly wash and remove all dirt, slice into small cubes, boil in a pressure cooker for 3-4 whistles until nice and soft.

  2. Wash channa dal and soaked for 1 hour, add in a small bowl with salt, turmeric powder and little water.

  3. Add 1/2 cup water in a pressure cooker and place this bowl in the cooker for 4 whistles. Take out steam and cool down.

  4. In a big bowl mash boiled yam pieces and channa dal, add all spices, chopped onion, ginger, green chillies, garlic, ginger and oats till you get a binding texture.

  5. Add little water in cornflour and make a slurry, grind soya granules into powder.

  6. Shape this mixture into small flat tikkis or cutlets, dip into cornflour slurry and roll in the soya granules powder then shallow fry the patties by adding oil. Cook them till they become crisp and brown on both sides.

  7. Serve hot with green coriander pudina chutney or tomato ketchup.

Tips:

  1. You can add 2 tab sp. soya flour or gram flour instead of channa dal.

  2. You can also deep fry these cutlets.



Step by step recipe of Yam [Suran] Tikki:

In a big bowl mash boiled yam pieces and channa dal, add all spices, chopped onion, ginger, green chillies, garlic, ginger and oats till you get a binding texture.

Add little water in cornflour and make a slurry, grind soya granules into powder. Shape this mixture into small flat tikkis, dip into cornflour slurry and roll in the soya granules powder then shallow fry the patties by adding oil. Cook them till they become crisp and brown on both sides.

Serve hot with green coriander pudina chutney or tomato ketchup.
